Glamorgan Sausages – Cooked for the Recipe Hunters during their visit to Wales
What great fun it was welcoming Leila and Anthony the Recipe Hunters to my home in West Wales. We talked about my food heritage and how that had influenced my life and what I do today. I cooked my version of Glamorgan Sausages for them using a local product Toloja’s Sweet Herb Mustard in the ingredients list.
This is my ingredients list:
Fresh breadcrumbs, grated cheese, an egg, teaspoon or two of sweet herb mustard, finely chopped leek and good butter and oil for frying. Use good butter for sweating off the leeks in before adding to the other ingredients. Make sure the cooked leeks have cooled down enough before adding to the dry ingredients and your mustard.
Quantities: use half the weight of breadcrumbs to cheese and usually one small to med leek is fine. For the quantity shown in the film I whipped one egg but did not use all of it. This is where you need to get a feel for the ingredients to know if the mixture is wet enough to hold together and not too dry that they fall apart, Let me know how you get on. No need to add salt as the cheese will be salty enough of course.
